07Almadraba bluefin tuna: what to order

The almadraba is a millennia-old fishing art practised off this coast between April and June. In Zahara, tuna is not a trend — it is a season.

If it is your first time, work from the mildest cut to the most intense: ventresca (the fattiest and silkiest), tarantelo (balanced and juicy), loin or solomillo (clean and fine), morrillo (juicy, ideal seared) and mojama or cured tarantelo as an aperitif.

One simple rule: the better the tuna, the less it needs. A short sear, salt, good olive oil.

08Where to book first?

If you only have one night: Antonio for the tuna, La Botica for an elegant dinner, TrasteO if you prefer a chef-led kitchen.

If you have several days: spread them across a traditional lunch (Casa Juanito), a beachfront lunch (Zokarrá Playa) and a sunset at El Refugio.

In high season, always book ahead: the good tables in Zahara go weeks in advance.
